The sturgeon is a threatend species of animal, which must only be fished in limited amounts. But in the flat lowlands by the North Italian river Po a small firm breed sturgeon and extract one of the worlds finest delicacies : Caviar

It is far from the North Italian autobahns tristesse to the exclusive world of the rich and those with a penchant for luxury, which normally is associated with genuine caviar. And yet. The truth is that the exclusive delicacy today is sought after by still more people in the world, particularly in the Asian countries, but paradoxsicaly also in Russia, which historicaly is the homeland of caviar, but has ruined the natural habitat of the sturgeon.
